This is a Quebecois meat pie, traditionally served during the holidays.

I don't know that my version is really authentic, but I know that it's good!

ingredients

  • pound of hamburger
  • pound of ground pork
  • pressed garlic clove
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 2 TB dried parsley
  • 1 cup beef broth
  • 1 tsp salt
  • 1/2 tsp freshly-ground black pepper
  • pinch of sage
  • pinch of nutmeg
  • pinch of cloves
  • pinch of cinnamon
  • 1/2 cup plain bread crumbs
  • 4 pie crusts - there's a recipe for pie crust in my pumpkin pie post or you can be lazy and use bought ones

method

  1. Brown the meats in a large skillet over medium heat.
  2. Add all other ingredients except for the last two. Raise heat until mixture comes to a boil, then reduce heat, cover and simmer for 30 minutes.
  3. Add bread crumbs and cook uncovered until mixture thickens; you want it to be be moist, but with little liquid.
  4. Cool meat mixture before assembling pies. Cut vents in top pie crust.
  5. Bake at 425 degrees for 15 minutes, then reduce heat to 350 and continue baking for 30-40 minutes.
This is good either hot or cold.
