This is a Quebecois meat pie, traditionally served during the holidays.
I don't know that my version is really authentic, but I know that it's good!
ingredients
- pound of hamburger
- pound of ground pork
- pressed garlic clove
- 1 large onion, chopped
- 1 stalk celery, chopped
- 2 TB dried parsley
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp freshly-ground black pepper
- pinch of sage
- pinch of nutmeg
- pinch of cloves
- pinch of cinnamon
- 1/2 cup plain bread crumbs
- 4 pie crusts - there's a recipe for pie crust in my pumpkin pie post or you can be lazy and use bought ones
method
- Brown the meats in a large skillet over medium heat.
- Add all other ingredients except for the last two. Raise heat until mixture comes to a boil, then reduce heat, cover and simmer for 30 minutes.
- Add bread crumbs and cook uncovered until mixture thickens; you want it to be be moist, but with little liquid.
- Cool meat mixture before assembling pies. Cut vents in top pie crust.
- Bake at 425 degrees for 15 minutes, then reduce heat to 350 and continue baking for 30-40 minutes.
This is good either hot or cold.
