Talia mentioned my cookies in her
New Year's post and it occurred to me to share my favorite recipes.
sugar cookies
These are your basic rollout and cut into shapes cookies, but the recipe makes them very rich and delicious as well as decorative.
ingredients
- 2 sticks softened butter
- 3 oz softened cream cheese
- 1 cup sugar
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1 egg yolk, separated
- 2 1/4 cup flour
- red-colored and green-colored sugar (optional)
- 1/2 cup powdered sugar, divided (optional)
- 2 TB hot water, divided (optional)
- red and green food coloring (optional)
method
- In a large bowl, cream together he butter, cream cheese and sugar.
- Stir in the salt, both extracts and egg yolk.
- Sift flour into bowl and mix until smooth.
- Cover bowl with plastic wrap and place in refrigerator for at least 8 hours.
- Place 1/3 of dough on a lightly floured wooden cutting board and roll to a 1/8 inch thickness. Cut into desired shapes with lightly floured cookie cutters.
- OPTIONAL: brush cookies lightly with beaten egg white and sprinkle with a mixture of red and green sugars before baking.
- Bake at 350 degrees for about 7-10 minutes. Watch the first batch closely to get the timing right.
- Allow to cool on cookie sheet for about 1 minute before removing to rack to cool.
- Allow to cool completely before proceeding.
- OPTIONAL: For any cookies without sprinkles, place the powdered sugar in two bowls, thin with some hot water, and add a few drops of red food coloring to one bowl and green to the other. Mix and apply to cooled cookies with a thin paintbrush.
- Store in air-tight container.
kiss cookies
A yummy peanut butter cookie with chocolate.
ingredients
- 1 stick softened butter
- 1 cup brown sugar
- 1 beaten egg
- 1 cup peanut butter
- 1/2 tsp vanilla extract
- 1 1/2 cups flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 cup red-colored sugar
- 1/4 cup green-colored sugar
- bag of Hershey Kisses (or similar), unwrapped
method
- In a large bowl, cream together butter and sugar.
- Mix in egg, peanut butter and vanilla.
- Sift flour, salt and soda into bowl and stir until mixed.
- In a small bowl, mix the colored sugars.
- Roll batter into 1 inch balls. Roll balls in the sugars.
- Bake at 350 degrees for about 10-15 minutes. Watch the first batch closely to get the timing right.
- When cookies are removed from oven, press a kiss down into each to slightly flatten the cookie.
- Allow to cool on cookie sheet for about 1 minute before removing to rack to cool.
- Allow to cool completly before storing.
thumbprint cookies
I use my own homemade jams for these, which makes them particularly scrumptious.
ingredients
- 3 sticks softened butter
- 1 cup sugar
- 3 egg yolks
- 1 1/2 tsp vanilla extract
- 3 cups flour
- jam or preserves
method
- In a large bowl, cream together butter and and sugar.
- Stir in egg yolks and vanilla.
- Sift flour into bowl and mix until smooth.
- Roll dough into 1 inch balls and place on cookie sheet. Make an indentation in each with your thumb. Fill indentation with jam.
- Bake at 400 degrees for about 15-20 minutes. Watch the first batch closely to get the timing right.
- Allow to cool on cookie sheet for about 1 minute before removing to rack to cool.
- Allow to cool completely before storing.
butterscotch haystacks
I usually make these last as they're the easiest and I'm a bit tired of baking cookies by the time I get to them. Though they're amazingly easy, they're quite yummy.
ingredients
- 3 cups butterscotch chips
- 5 oz can chow mein moodles
- 1 cup salted peanuts
method
- Melt the chips in a double boiler, stirring constantly.
- Add noodles and peanuts and mix quickly.
- Drop by spoonfuls on to wax paper. Let stand until cool.
