scalloped potatoes

I strongly prefer scalloped potatoes over mashed potatoes with a ham dinner. Something about their creamy consistency just "goes" with ham.

So for Easter, here's my scalloped potatoes recipe.

ingredients

  • 1/4 cup butter
  • 1 small onion, chopped
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1/8 tsp freshly-ground black pepper
  • 4 medium potatoes, cut in 1/4 inch slices

method

  1. Melt butter in cast-iron skillet over medium heat.
  2. Add onion and cook, stirring occasionally, until tender.
  3. Add flour to skillet and mix until incorporated.
  4. All at once, add the milk; stir rapidly until well mixed.
  5. Continue cooking with constant stirring until bubbly.
  6. Remove skillet from heat and stir in pepper.
  7. Layer half of potatoes in a casserole dish.
  8. Top with half of sauce.
  9. Add rest of potatoes, then rest of sauce.
  10. Bake at 350 degrees for an hour.
This recipe can easily be doubled.
