I strongly prefer scalloped potatoes over mashed potatoes with a ham dinner. Something about their creamy consistency just "goes" with ham.
So for Easter, here's my scalloped potatoes recipe.
ingredients
- 1/4 cup butter
- 1 small onion, chopped
- 1/4 cup flour
- 1 1/2 cups milk
- 1/8 tsp freshly-ground black pepper
- 4 medium potatoes, cut in 1/4 inch slices
method
- Melt butter in cast-iron skillet over medium heat.
- Add onion and cook, stirring occasionally, until tender.
- Add flour to skillet and mix until incorporated.
- All at once, add the milk; stir rapidly until well mixed.
- Continue cooking with constant stirring until bubbly.
- Remove skillet from heat and stir in pepper.
- Layer half of potatoes in a casserole dish.
- Top with half of sauce.
- Add rest of potatoes, then rest of sauce.
- Bake at 350 degrees for an hour.
This recipe can easily be doubled.
