chocolate-covered strawberries

This is a perfect dish to make as a gift for Valentine's Day.

It's really pretty easy to make, yet is a decadent and pretty dish.

ingredients

  • 2 quarts of ripe strawberries
  • 2 Lindt Excellence 85% cocoa chocolate bars
  • foil cupcake liners
  • tissue paper (red or white)
  • decorative tin (heart-shaped would be best)

method

  1. It's important in this setup that water does not get into the chocolate!
  2. Place strawberries in a colander and rinse. then dry very thoroughly.
  3. Place a small pot half-filled with water on the stove over high heat. Bring to a boil, then reduce heat to medium.
  4. Break up one of the chocolate bars into pieces and place in a jelly jar. Place the jar into the pot of simmering water. Stir occasionally until thoroughly melted.
  5. Hold a strawberry by the stem, dip it into the chocolate, leaning it slighty to one side then the other, so shoulders are covered. Remove from chocolate and hold over jelly jar for a minute to let excess drip off. Place the strawberry in a foil cupcake liner.
  6. Repeat with the rest of the strawberries, replenishing chocolate as needed. When you add more chocolate, stir for a minute to make sure it's melted before dipping again.
  7. It takes about 2 bars to do 2 quarts of strawberries, but you'll have about a half bar left in the jar when you finish. Thus the cook is sadly forced to eat the excess chocolate. ;)
  8. Cool strawberries in refrigerator for a few minutes to harden chocolate.
  9. Center a piece of tissue paper in a tin. Place a layer of strawberries in it, then fold the tissue paper over and add a second layer, etc.
